Jackfruit Pulled Tacos

This recipe will have everyone fooled! Simmered in barbecue sauce, jackfruit looks just like pulled pork. Stuff it in a bun or in tortillas, and you will never realize you’re eating a fruit!

Ingredients

  • Two 20-ounce cans jackfruit in brine, rinsed and patted dry

  • 1/2 teaspoon chipotle pepper powder (optional)

  • 1 teaspoon black pepper

  • 1 Tbs smoked paprika

  • 2 Tbs onion powder

  • 1 Tbs garlic powder

  • 1 teaspoon cumin

  • 1 teaspoon liquid smoke

  • 1 cup barbecue sauce (oil-free)

  • 8 large buns or tortillas

Instructions

Separate the and shred the jackfruit before combining it with all the seasonings in a large bowl. Heat 2 tablespoons vegetable broth in a large skillet over medium high heat. Add the jackfruit and cook, tossing occasionally, until the spices are fragrant 2 to 3 minutes. 

Add ¾ cup barbecue sauce and liquid smoke to the skillet along with 3 cups water, stir, bring to a simmer, cover, and reduce the heat to low. Cook, stirring occasionally, until tender, 45 minutes. Preheat oven to 350F. Uncover the skillet, turn the heat to high and simmer until the color has deepened and the sauce is thick, 4 to 5 minutes. Remove from the heat. 

Spread the jackfruit on a prepared baking sheet at 350F for 20 min or until the jackfruit has browned edges. Remove from oven and return to skillet. Add remaining barbeque sauce and serve on buns or tortillas.
