Vegan Cheese Sauce
This vegan, gluten-free “cheese” is a perfect substitute for real cheese and is actually healthy and inexpensive.

Ingredients
- 2 cups peeled Yukon gold potatoes
- 1 cup peeled carrots
- 1 cup water (from the water used to boil potatoes & carrots)
- ½ -1 tsp salt
- 11/2 tbsp lemon juice
- 1/2 cup nutritional yeast
- 1/2 tsp garlic powder
- 1 tsp onion powder
- 1/4 tsp smoked paprika
- Dash of cayenne powder (optional)
- Chives (optional)
Instructions
Wash and scrub the potatoes and carrots, chop into uniform pieces, and boil for 20 minutes.
Let rest for 5 minutes and then, with a slotted spoon, transfer the veggies to your blender.
Add 1 cup water from the pot of boiled potatoes and carrots and pulse to mix.
Add remaining ingredients and blend until smooth and creamy.
