Vegan Cheese Sauce

This vegan, gluten-free “cheese” is a perfect substitute for real cheese and is actually healthy and inexpensive.

  • Total Time: 30 minutes
  • Yield: 6

Ingredients

  • 2 cups peeled Yukon gold potatoes
  • 1 cup peeled carrots
  • 1 cup water (from the water used to boil potatoes & carrots)
  • ½ -1 tsp salt
  • 11/2 tbsp lemon juice
  • 1/2 cup nutritional yeast
  • 1/2 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp smoked paprika
  • Dash of cayenne powder (optional)
  • Chives (optional)

Instructions

  1. Wash and scrub the potatoes and carrots, chop into uniform pieces, and boil for 20 minutes.

  2. Let rest for 5 minutes and then, with a slotted spoon, transfer the veggies to your blender.

  3. Add 1 cup water from the pot of boiled potatoes and carrots and pulse to mix.

  4. Add remaining ingredients and blend until smooth and creamy.
