Cauliflower Rice Tacos
This is one of my favorite "go to" meals. It contains so much goodness, that you can eat unlimited amounts and be healthy and fit. Cruciferous vegetables have so many benefits. They have anti-carcinogenic properties, have been known to decrease depression, lower blood pressure, decrease incidence of Type 2 Diabetes, increase cognitive enhancement, and decrease inflammation and pain in fibromyalgia patients. The most amazing thing about this dish is that you won't even know you're eating cauliflower. You will think you're eating rice!

INGREDIENTS
- 1 Frozen bag of cauliflower rice
- 1/4 cup pico de gallo
- 2 Tbs lemon or lime juice
- 6 corn tortillas (oil-free)
- Pepper to taste
INSTRUCTIONS
Follow the directions for cooking on the bag of frozen cauliflower rice. Add approximately 2 minutes to cooking time to soften the cauliflower more and increase likeness to the texture of rice. While the "rice" is cooking, warm tortillas either in a pan or over a gas burner. I like the edges of my tortillas a little burnt so prefer to toast over a gas burner. Carefully remove the "rice" from microwave and mix in the pico de gallo, lemon/lime juice, and pepper.
Serve with tortillas and enjoy!
